PheNOMNOMNOMenal Salad Dressing.. 3 pointsplus!

Long time no blog! Last week was a crazy week for me and I was acting a little odd. Definitely did not feel myself. But my work outs were still in line at least...food not so much. But this week I am on track!

I have been AMAZING with my vitamins! Taking them every morning. I have also been great with my protein after the grueling weight workouts I have been doing.

This morning I started with a light 1/2 cup of lemon yogurt with cut up banana and strawberries. (1 pointplus)


I may have mentioned this before but I can't handle many dairy products. I have done a lot of reading up on lactose intolerances and yogurt and a few other products seem to be okay in that regard. (if I ever refer to my tummy as "high maintenance" its generally because of my lacto problem.)

After a few hours of cleaning up and getting ready I blended up a really yummy green monster! (frozen mango, spinach, vanilla protein powder and soy milk in this bad boy!)

I began to pack up todays snacks and lunch. I am in school until about 1:30 then I usually hit up the gym for some weights so I like to be prepared for that. Carrot sticks/cucumber, grapes, banana, apple, one light babybel cheese (1 pointplus), weight watchers creamy chocolate smoothie (2 pointsplus), and my salad.

I have been eating this LOVELY salad dressing. I got the recipe from a friend and it is so amazing! It has been actually made me crave salad (this is a rare thing for me!). It goes very well with pecans, strawberries and goat cheese (another dairy that seems to work alright in my tummy tum tum). (Vanilla honey goat cheese too.. super yum!)

Since I love this recipe so much I thought I would share it with you all!




Ingredients:

1 tbsp sesame oil
1 tbsp apple cider vinigar
1 tsp low sodium soy sauce
1 tsp tahini
1 tsp sesame seeds (optional)

Add these all together in a small cup and TADA! I put very little dressing on my salads so this recipe makes 2 servings. Each serving works out to be 3 pointsplus. Pretty nommy if you ask me! (also works nicely with dates in the salad!)

I had such a lovely day today and definitely felt more like me today. Went to the gym with my gym buddy after school and did a nicely planned out lower body workout. Also, spent time eating dinner and enjoying a nice hot apple cider with a friend later on in the evening. Contemplated going for a run but after yesterdays unexpected 11.56 km I ran, wasn't sure if I was totally up for the idea. I have been pretty sore from the amount of weights I have been putting in, but I am feeling phenomenal. Also, I was pretty stoked to see my interval timer I ordered online had arrived. Yes...its pink. For those that know me well, you are probably not surprised! 

Though I had a tough week last week, I am trying to look on the positive sides of things. By doing that, my week so far has been great. I am feeling more alive and motivated then I have in years ....alright a week. It just feels like it has been a while because I am generally good at pulling myself out of a slump. But last week was not one of those weeks that I told myself to get up and shake it off. So this week I am focusing on me. My education. My work. My fitness. My health. MY life. That is my goal.
