Busy Sunday


This morning I woke up with one thing on my mind. TODAY was going to be a good day and I was going to stay within my daily points plus target! I started my morning with a shake. In the shake? tropical vega smoothie mix, frozen blueberries and mango, water, ice, chia seeds. Yum!

My friend Kirsty and I have teamed up and decided food blogging and keeping each other in line is the best ways to go. Today went pretty well. We both ran an awesome 15 km, felt like total rock stars conquering King George Terrace (a monster hill, or what we used to think was a monster hill.. we kicked its butt!)


After we went for tea and chatted a bit before going off to rest before work. Matt and I decided to pick up some groceries then relax together after some yummy BRUNCH. In the omlette: 1 whole egg, 3 egg whites, onions, red peppers. Then turkey bacon and rye toast with vegan margarine and pineapple.




After that I decided to prep dinner so I could throw it in the oven once I got home. I had a long evening ahead of me. I drank about 2 litres of water and had 2 bananas and 2 apples for my snacks today. (here is one of each of these.. and no I didnt eat all these fruits together, I had some in my purse for throughout the evening)


At my meeting I had 3 members sit! Which was nice and the most I have had. I have a lot of hope this meeting will grow, tonight was the best night yet. After work I headed to campus for a group project. So was not thrilled about it but it had to be done. We brainstormed for an hour and a half, and I would say it was very productive.

Matt picked me up and took me home. I snacked on frozen mango while dinner was in the oven. I was starving by this point so I am proud I didn't eat a bunch before dinner!

For dinner I roasted veggies, had a healthier version of chicken parmesian (hehe) and brown rice. I only had about 1/4 cup of brown rice to cut down on points, plus I wanted to put half of the chicken and rice in a tupperware container for lunch tomorrow.




Turned out VERY well. It was absolutely delicious. Now I am absolutely exhausted, and it is time for bed. Night all!
